Vegan Pancakes “at the speed of cereal.” That’s a bold claim, and while quicker than mixing your own, they take longer than a bowl of cereal. Eat Just has released the first-ever vegan pour-and-flip pancakes: Power Jacks, and I am all for easy vegan breakfasts.
Eat Just is known for its first product, “Just Mayo“, and more recently “Just Egg“, whose protein source is the star of Eat Just’s “Power Jacks“, the new ready-made Just Egg pancake mix. Offering 5 grams of protein per flapjack, Eat Just Power Jacks are made using their famed mung bean protein. Power Jacks is a refrigerated pancake batter available in “Original” and “Chocolate Chip“, and each package serves 8 standard-size flapjacks. Aside from being plant-based, non-GMO, and cholesterol-free, Power Jacks are nutritionally similar to leading protein pancakes on the market. Making it easy to fuel without cruelty.
I tried both flavors, and for protein pancakes, I was impressed. Generally, with protein pancakes, I battle a gritty or chalky texture, but that is not present in Power Jacks. The batter is thick, creating a dense and spongy pancake. In the future, I plan to water down my batter for fluffier cakes. Both flavors are sweet despite one being Original and the other Chocolate Chip, and I believe that is due to the maple syrup present in the ingredients. In the Original Power Jacks, there is a very sweet maple-honey flavor, but when garnished with standard pancake toppings like butter, syrup, and fruit, they taste like traditional hot cakes. I am a huge fan of Chocolate Chip Pancakes topped with nothing but a blanket of powdered sugar, so for that reason, the Chocolate Chip Power Jacks are my favorite. This is sweet nostalgia for breakfast!
Just Egg’s Power Jacks are labeled plant-based, and I’ve confirmed with Eat Just that all new pancake mixes are fully vegan (see email from them below). Looking for the ingredients? Find them at the bottom of this post.1 So far, the only local store carrying Power Jacks is Target, but I am sure we will see it pop up in other stores like Walmart and Sprouts soon. The internet is “swirling” with rumors that a Cinnamon Roll flavored Power Jacks mix is on the way. I asked Eat Just to confirm, and they shared that the initial rollout of “Cinnamon Roll” Power Jacks is limited to 300 Target stores (I believe these are the “Super Target” locations) but will be introduced to more stores in the coming months.
