Chicken made from plants isn’t new, but it is from Eat Just.
First showcased at Natural Products Expo West 2025 (where I somehow completely missed their booth), Eat Just is finally rolling out their newest innovation, JUST Meat Chicken, in 3 flavors: Original, Buffalo, and Sesame Ginger. Before we dive into the review, let’s recap- Eat Just is a food technology company focused on making healthier, safer, and more sustainable food. They source their ingredients from plants and are best known for their JUST Egg product developed using mung beans, as it is the first time the ingredient was regulated for use as a specific protein isolate. 1
Unlike ‘Good Meat,’ which is Eat Just’s cultivated meat company, ‘JUST Meat’ is 100% plant-based. Made of a combination of wheat and soy protein, each serving offers 18 grams of protein, and each box contains 3 servings (roughly the equivalent of 2 chicken breasts). There is an ingredient that is sparking concern, however, “Natural Chicken Flavor”. While this may sound confusing, I reached out to Eat Just, and they confirmed via email that it is plant-derived and contains no animal products. This kind of flavor is common in vegan products that try to replicate savory, meaty notes (similar to how some vegan broths use “chicken flavor” made from yeast extracts, amino acids, and spices). I picked up my JUST Meat Chicken at Sprouts. It comes frozen, and pan-fries to fully cooked in less than 10 minutes. It comes in thick chunks and browns nicely. I shredded mine for tacos, and served as a mini taco bar for my fam, complete with JUST Meat Chicken, onions, cilantro, lettuce, black beans, tomatoes, and salsa. My mom said the texture and flavor are just like chicken, which I am bound to believe. The texture reminds me of Daring Foods plant-based chicken, and the flavor is salty and savory. I haven’t had chicken in over 20 years, so while this tastes like chicken to me, the fact that my mom is impressed by it is proof that Eat Just must have nailed it.
While I chose the original flavor this round, I could see the Sesame Ginger JUST Meat Chicken being delicious in an “egg roll in a bowl” or in a stir-fry. Would you try JUST Meat Chicken?
