UMAMI it’s finally noodle time!

The newest food fare in Modesto is a forecasted hot spot, that is currently in the soft-launch phase and available for pre-order only.

Konfucious Eats is Modesto’s first craft ramen shop, and they have included a Vegan Ramen Bowl on their menu just for us! Everything is made in-house, from the broth, to the noodles. Ernie, the Ramen King himself, has shared that after opening even more menu items will be available, including that of a “secret nature” for those who stop in often or take advantage of a Konfucious Eats “Ramen Pass”.

The Konfucuois Eats Vegan Ramen Bowl is made of traditionally made noodles, plant-based broth, vegan sauce, tofu and veggies!

I found the broth to be the most noteworthy of the Vegan Ramen Bowl. With notes of garlic and ginger, the broth is made of root vegetables and cabbage, then seasoned with a vegan “tare” (or sauce) made of soy, sun-dried tomatoes, spices, Kombu (kelp!) and dried shiitake. The shiitake is what I think provides the rounded nutty flavor of the broth, that really makes this bowl stand out.

The vegan noodles are made traditionally, without egg and are made especially for the Vegan Ramen Bowl! The noodles are thick, aplenty, and become more tender as they soak in the warm broth.

The Tofu is lightly braised and seasoned, and could be eaten alone, or married with the broth in your ramen. Additional Tofu can be added to ramen bowls for an additional charge, as can the veggie toppings.

In addition to scallions, bean sprouts, red onion, and spinach, the Vegan Ramen Bowl is topped with sliced, seared tomato. While I would have never thought to add sliced tomato to my ramen bowl, its light and acidic flavor complemented the heavier umami broth and noodles perfectly.

The Vegan Ramen Bowl is available pre-made, with the fixings in a bowl and the broth on the side until ready to serve, or a in a “kit” where you piece together the noodles, tofu, toppings, and broth whenever you’re ready to eat!
