In 2020 Crafty Counter, along with the founder’s family, began the journey to plant-based. In transitioning to vegan they found themselves missing the satisfaction of eggs, and learned they weren’t alone! With most plant-based egg alternatives mimicking scrambled eggs, Crafty Counter got to work creating the world’s first-ever vegan hard boiled eggs!
Wunder Eggs are nut-based and contain zero cholesterol and zero cruelty! While they look and taste like chicken eggs, they are made from minimal whole food and plant-based ingredients, but maintain similar nutritional value. Wunder Eggs currently come 6 halves to a pack (equivalent of 3 whole eggs), and to “activate” the eggy flavor, a packet of black salt for sprinkling prior to serving.
I haven’t had hard-boiled eggs in so long that I wasn’t sure how I should use Wunder Eggs, but knew I had to try them. These could be easily made into Deviled Eggs (hello Easter!) and Wunder Eggs are delicious on their own, but I wanted to showcase them in a fun way. I opted for Crafty Counter’s recommendation of avocado toast, and then made a simple egg salad sandwich.
For my Wunder Egg toast, I topped toasted sourdough bread with mashed avocado, lemon juice, salt + pepper, sliced red onion, sliced Wunder Egg, and sprinkled white and black sesame seeds. The solid egg white is an exact texture match that I remember, and the yellow yolk is a chalky, pasty consistency with a rich and savory flavor that I would have thought is the real deal. This breakfast is why some boomers think I will never afford a house, and to them I say, “worth it”.
My Wunder Egg Sando is my favorite use of the egg so far. I lightly toasted fluffy white bread (so it could better secure the filling), then filled with a halved Wunder Egg, and a mixture of 2 chopped Wunder Egg halves (equivalent of one full egg) and about 1 + 1/2 tablespoons vegan mayo, and one sliced green onion. With the one-halved Wunder Egg placed center, the sandwich sliced vertically showcases the vegan egg’s bright white shell and sunny yellow center. With little to no seasoning I was really able to appreciate the Wunder Eggs’ flavor and texture, which can best be described as “eggy”.
Overall I am so impressed with Wunder Eggs and cannot wait to try them in so many more ways once they are available in stores near me. Wunder Eggs are currently only available in Whole Foods stores nationwide. However, you can purchase a 6 pack on their website at a small discounted rate. Wunder Eggs come in a package of 6 halves, equating 3 whole eggs. They were a bit pricey, but definitely worth the experience I have been without for over 18 years. I am also sure as they roll out to more stores and are produced in a higher quantity the price will become more feasible. Stay tuned as well, because more Wunder Egg varieties are on the way (I saw some egg white patties on their website that I can’t wait to try once they’ve been unveiled)!
