A big pink truck full of vegan tacos? My dream come true!
This Taco Tuesday we are talking about Las Maris Food Truck! An all vegan Mexican food truck based in Stockton, California. Las Maris was originally a traditional taco truck, but when the owners transitioned to a vegan diet, so did their business! The response from our community has been overwhelmingly supportive and I for one, am so happy they are on the vegan journey with us!
This past weekend Las Maris popped up in Modesto, and had such a great turnout, they sold out early! Rumor has it they may even be back this weekend, so read along to learn more about the vegan offerings you can find on your visit.
I wanted to try a bit of everything, and can you blame me? The menu is comprised of veganized taco truck favorites such as burritos, tacos, and quesadillas with your choice of seasoned Jackfruit or vegan carne asada. I ordered two standard crunchy tacos, a supreme quesadilla, and their special “Hot Cheeto Burrito”.
For my crunchy tacos, I ordered one with jackfruit and one with vegan carne asada (beefless crumbles). They were served in fried corn tortillas with dairy-free cheese, chopped onion, and cilantro. The jackfruit was seasoned with a mild spice and the texture melts in your mouth. While the jackfruit is tasty, my preference lies with the vegan carne asada. The jackfruit is their number one seller however, and I can understand why!
The supreme vegan quesadilla is massive! A flour tortilla is packed with vegan cheese, choice of protein (mine was vegan carne asada), tomato, onion, cilantro, and non-dairy sour cream. I definitely had to cut mine into smaller portions in order to eat, and with a squeeze of lime and side of salsa, it was devoured in no time.
Last up is my favorite item from the lot, Las Maris “Hot Cheeto Burrito”! A traditional vegan burrito of rice, pinto beans, cilantro, and choice of protein is encased in a flour tortilla with the addition of Peatos Firey Hot Crunchy Curls. If you’ve been following me for a bit, you may remember my post regarding Peatos Firely Hot Crunchy Curls. They are a dead ringer for hot Cheetos, packed with pea protein, and are vegan-friendly. The addition of Firey Hot Peatos in this burrito is unexpected, but pairs well with the flavors present in Mexican cuisine, and provides a nice texture balance overall. I will definitely be ordering this again on my next visit, plus so much more.
