Family-owned bakery Silver Hills has been sprouting bread and focusing on plant-based nutrition since 1989. Silver Hills offers several varieties of spouted sliced bread, bagels, buns, and tortillas and all are certified vegan containing no animal by-products, not even honey!

I picked up two loaves of sliced bread at my local Target: Soft Wheat and The Big 16. Their Soft Wheat is the closest in their line to traditional sliced bread, as it is made with 50% sprouted whole grains and 50% wheat flour. I bet it would even fool the kids when used for their PB&Js! The Big 16 has more of a firm texture as it is stuffed with seeds and topped with added oats but is still soft and fluffy. I used my Soft Wheat bread to make a dessert for family dinner night, and toasted and loaded The Big 16 with my favorite sandwich fixings.

Silver Hills The Big 16 Bread is the perfect hearty bread for my favorite sandwich. Instead of a traditional spread, I like to use hummus, then layer my sandwich with a pan-fried and lightly seasoned tofu patty, sliced avocado, alfalfa sprouts, and pickled red onion. I cubed some Silver Hills Soft Wheat Bread to make a vegan bread pudding. The bread is soft and absorbent, perfect for soaking up custard and browning in the oven. Silver Hills Bakery products are available at Target, Costco, and Whole Foods. My store stocked them frozen, but some stores have them with the shelf stable bread, ready to eat. To thaw I just left on the counter, but you can also defrost individual pieces in the microwave, or simply toast from frozen.

Are you a fan of sprouted bread? It is generally too grainy for my liking, but Silver Hills balances the texture so the bread still presents as soft and fluffy.

Vegan Bread Pudding Recipe

Ingredients:

-5 Cups Silver Hills Soft Wheat Bread

-1 Can Coconut Milk

-2 Tablespoons Vegan Butter (I used Earth Balance)

-1 tsp Vanilla

-1/3 Cup Sugar

-Pinch Salt

-Replacement for 2 Eggs ( I used Liquid Just Egg)

Directions:

1. Preheat Oven to 350 Degrees F.
2. Heat Milk, Butter, Vanilla, Sugar, and Salt over low heat until melted and combined.
3. Let mixture cool and dice/cube the bread.
4. After mixture is cooled add in egg replacement and mix.
5. Oil your dish (I used individual ramekins) and add bread.
6. Pour mixture over bread cubes and bake for at least 30 minutes until custard is bubbling and set.
