My Sun, My Sunshine, O Sole Mio!
O Sole Mio is a family company based in Quebec, creating fresh flavors of Itlay since 1960. They create ready-to-serve products that are 100% fresh, and made with no additives or preservatives. It was only a matter of time before they stepped foot into the plant-based market, and I am pleased to see they are even expanding their vegan product range!
Tortellini is traditionally made with many animal ingredients, including egg, dairy, and sometimes meat. Therefore it is something we do not typically find in vegan form. When I happened upon O Sole Mio’s plant-based variations, I was beyond excited! I found their Plant-Based Cheese Style Tortellini, Plant-Based Beefelss Tortellini, and Plant-Based Vegan Alfredo Sauce all at my local Save Mart.
Fresh pasta made by a company that specializes in it, makes the biggest difference in taste and texture. I couldn’t decide which O Sole Mio Plant-Based Tortellini to try, so I ended up mixing both the Beefless and Cheese Style. I heated the vegan alfredo on the stove, but there is an easy microwave suggestion on the tub. When mixing the alfredo sauce with the tortellini, I included a small amount of pasta water, reserved from the pot before draining. This is a hack to really get the best flavor and get your sauce to adhere to the pasta.
O Sole Mio Vegan Alfredo Sauce is creamy, peppery, and chock-full of onion, garlic, and herbs. This is the perfect sauce to coat pasta or drench garlic bread. I bet it would even make a great pizza sauce! Both varieties of Tortellini are tender and chewy. The Cheese Style is creamy and crumbly reminiscent of Ricotta, and the Beefless Tortellini is lightly spiced with a texture similar to ground beef. I topped my mixed O Sole Mio Tortellini with vegan parmesan shreds, parsley flakes, and sliced tomato. I will definitely be making this again, so you better run to Save Mart before I do!
