It’s National Mac & Cheese Day! If you didn’t know that was a thing, now you do, and aren’t you glad we live in a time with vegan mac and cheese choices?

In honor of the holiday let’s enjoy the new hidden veggie vegan mac from Camp! Camp set out to make “the nostalgic tastes you know and love, with the veggies you know you need”. They’ve added a Vegan Cheezy Mac to their line of “Plant-First” pasta, and when I saw it came in a pink box I knew it was meant to be!

Camp’s Vegan Cheezy Mac is gluten-free, packed with protein, and includes a full serving of vegetables in each bowl. While the pasta is gluten-free I found it to be surprisingly firm, and not as soft as other gluten-free pasta I have tried. It is made from a blend of organic corn and brown rice flour, with added zucchini and carrot! I found the vegan cheese powder to be cheesy (of course), nutty (I think from the maitake mushroom and sunflower seed blend), with a tinge of sweet (my guess is that it is due to the sweet potato and pumpkin powders). The sauce consistency is thick and sticky when following package directions, and adheres to the pasta perfectly. Camp is “Tasty made Speedy” and I love that I can eat a comforting bowl of mac & cheese while fueling my body with the veggies it requires.

Currently Camp offers only one variety of vegan mac, but I am hopeful they will add more vegan options to their collection, as with “Plant-First” it only makes sense!
