Impossible at Baja Fresh
Baja Fresh Mexican Grill is doing the IMPOSSIBLE!
Baja Fresh is a 90’s baby like me. Baja opened in 1990 with a vision for fresh food that’s handmade, and fast. With the showcasing of their plant-based menu items at the Critics’ Choice Awards in 2020, Baja showed that plant-based eating can be satisfying, tasty, and accessible. Now with the evergrowing fad of plant-based meat at fast food and casual dining, they’ve chosen to partner with Impossible Foods for a limited time to add variety to their menu for vegans and meat-eaters alike.
As of July 12th, Baja Fresh started to dish out Impossible burritos, tacos, and bowls at all of their locations. All three options can be made vegan by omitting the dairy (cotija cheese and/or sour cream), and their sides of rice and beans are prepared with no animal ingredients (but be sure to order beans with no cheese on top!). I am hoping there is a surge in plant-based orders with the addition of Impossible Foods, leaving no choice but to make it a permanent menu option. Baja’s spokesman stated: “Many of our guests have been asking for plant-based protein options and we know Impossible is loved by meat-eaters and vegans alike, so it was a natural decision for us to include it on our menu.”
I tried the Impossible Taco combo sans cheese, and the Impossible bowl with no sour cream. The tacos are made with “soft, grilled corn tortillas filled with Impossible meat made from plants topped with shredded lettuce, pico de gallo, guacamole, Baja salsa, and cotija cheese. Served with your choice of a side of black or pinto beans and Baja rice”. The bowl consists of, “Baja rice topped with Impossible meat made from plants, roasted veggies, sour cream, avocado, pico de gallo, and tortilla strips.” I was actually the biggest fan of the Impossible bowl! I love having all my favorite burrito fillings in one bowl, and the crunchy tortilla shreds add a taco crunch that is needed for the perfect bite. The Impossible meat was seasoned incredibly well, and I could definitely taste a salty taco spice blend. I can say I was blown away by this Baja Fresh meal, and this is the first time I have said that about Baja.
