Ajua! Vegan Options!
“Ajua” is a Mexican restaurant in Los Banos, California (Merced County), and is located within a quaint building housing several businesses. Looks can be deceiving, however, as upon entering you’ll find a large dining space, and near the register, a window overviewing the kitchen. While Ajua is a traditional Mexican restaurant, they have a sizeable vegan menu offering plant-based versions of tacos, burritos, enchiladas, and more.
I was traveling so I kept my Ajua to-go order short and ordered one menu item and a bag of chips and salsa. I opted for the Flautas, as they are my go-to when I can find ’em. Flautas are like a larger, puffier, taquito and these were stuffed with potatoes! I got 3 flautas de papa (potato) served with pico de gallo, guacamole, salsa, and rice and beans. The flauta tortilla was crunchy, while the potatoes inside were fluffy and soft. The plate was under $12, and overall this was a filling and delicious dinner that I would order again and again.
Whether you are passing through or choose to make a trip of it, Ajua’s vegan menu is worth the visit. Their dishes are made with fresh ingredients and cooked directly in view of your table. All of the vegan menu items are made without animal ingredients (including lard and chicken stock). Their chips and salsa are also vegan-friendly, and the chips can also be fried separately from all other menu items upon request. I love finding places with vegan menus in conjunction with traditional, as it makes it easier to share meals with those who are not yet on the journey to veg.
