‘Tis the season for tamales, and we have a Valley vendor who dishes up handmade vegan tamales, made from scratch with locally sourced ingredients!
Oaxacan Tamales is both the vendor’s name, as well as a type of tamal reigning from Oaxaca, a state within the southwest of Mexico. The Valley’s Oaxacan Tamales is a family-run business, that makes their mother’s beloved recipes and shares them with the community. There are currently 2 varieties of vegan tamales on their standard menu that they describe as “mom-approved twists on tradition”.
The two vegan flavors currently available are Mushroom & Zucchini, and Spicy Garbanzo. The Mushroom & Zucchini is mild but flavorful, made with sauteed mushrooms, zucchini, jalapeno, garlic, and onion. The Spicy Garbanzo is almost too spicy for me and leaves my mouth feeling like a dragon’s. This flavor is made with whole garbanzo beans, and a blend of refried garbanzo beans, chile de Arbol peppers, and garlic. I found it fitting to pair their green tomatillo sauce with the mild veggie tamales as it has a kick, and red mole with the Spicy Garbanzo tamales, as it is rich but mild. No worries, as all of Oaxacan Tamales sauces are vegan-friendly as they altered their original recipes to remove chicken stock.
Oaxacan Tamales are wrapped in banana leaves, found in the tropical parts of Mexico like Oaxaca. Their vegan masa is made with simply: corn, vegetable stock, onion-infused olive oil, salt, and yeast. The masa is salty, crumbly, soft, and flavorful. While I could eat the masa on its own like a cake, their filling-to-masa ratio is perfect.
