“CHILL” AQUILES! I may not know how to pronounce it, but it doesn’t stop me from ordering them!
Actually, I asked Alexa so assuming she was correct, next trip ima nail it!
Chilaquiles are similar to nachos, in that traditionally they are made with lightly fried and cut corn tortillas, and served with salsa and cheese. However, they are for BREAKFAST! Yes, breakfast nachos existed all along (we just couldn’t pronounce or spell it). Many variations exisit depending on region, and we are lucky to exist in one with a vegan variety!
Squeeze In serves vegan-friendly “Chill-Aquiles”, named as such because they are hippie and rad! The dish is made with sauteed and quartered corn tortillas and topped with; black beans, tomatoes, green onions, and tofu that is crisped and super firm! I chose red salsa/sauce to saturate mine, but they also have verde!
The Chill-Aquiles are what I ordered from the vegan section of their menu, but they have other items on the menu that are vegan as-is or can be modified! They’ve got a vegan burger, burrito and scramble that are equally drool-worthy, and all burgers on their menu can be swapped with a vegan patty, and then modified to your liking.
Something I love about Squeeze In (aside from how close it is to my home) is that they are strictly a breakfast, lunch and brunch spot! They are done woth their day at 2pm, and don’t we all wish ours was too?
Squeeze In is a restaurant based on hippie love and family. Named after the original Trukee, CA location where patrons would literally “squeeze-in” for their world-famous omelets, Squeeze In became an expanding franchise less than 15 years ago. I love the colorful decor and plateware, but most especially the trippy aliens that remind me of all that was totally cool when I was growing up in the 90’s!
I am hopeful for some plant-based egg scrambles in the future, now that JUST egg is on the market. I think it’s the next logical step for their hippie franchise, so I will be over here crossing my fingers, (but not holding my breath). In the meantime, I am a lover and avid consumer of tofu, so I won’t be complaining!
